Before my cravings used to be SO BAD! To the point as soon as I had a craving, I was in the car on the way to Whole Foods to go GET IT!!! Like what?! I needed more self control, so I was able to break the sugar addiction, through my 21 day Bikini Bootcamp!! But every now and then they come back and I was DETERMINED to stick to my goals!!!
So…Friday night hit, and I felt like I had the MUNCHIES all day! I was resisting the urge of diving into a bag of chocolate chips head first, and it got me thinking! Why not create a protein chocolate mug cake; and this recipe was born!!
Chocolate Sunflower Protein Mug Cake
(Gluten Free, Dairy Free, Tree Nut/Nut Free, Soy Free!)
- 2 scoops Chocolate Orgain Plant Based Protein Powder (Any kind should work!!)
- 2 Eggs
- 3/4 tsp Baking Powder
- 1/4-1/2 cup Coconut Milk (I used So Delicious 50 calorie Vanilla
- 2 teaspoons Enjoy Life Chocolate Chips (w/an extra teaspoon or two on the side if you want some on top!)
- Drizzle of Agave (optional)
- 1 tablespoon Sunbutter (optional)
In a cappuccino mug, or soup bowl add the protein powder, eggs, baking powder and coconut milk (starting with 1/4 cup and adding more if needed) and mix thoroughly! Next, stir in the 2 teaspoons of chocolate chips, and place the mug in the microwave. Cook for 3 minutes (checking sporadically) until it’s fully cooked. Check at 3 minutes, and if more time is needed put it in for another 15-30 seconds (it all depends on the size of the mug!)
Then, take the mug out, and take the mug cake out, placing it on a plate! Top with sun butter and agave (if you’d like) and sprinkle with some extra chocolate chips and ENJOY!
