Okay… So tonight let’s be honest I got a spray tan and needed a QUICK dinner that didn’t require me to make an elaborate dinner (and well… SWEAT) I said I was being honest!
I told Brian he was in charge of dinner (AKA grilling his favorite!) From there I decided I wanted to recreate a coffee rubbed sirloin I had in Nashville last summer at my annual Coach Summit! I remember going to my FAVORITE restaurant in Nashville AMOT (A Matter of Taste Eatery) and hearing they had a family styled fixed menu that we could choose from the options. The meat options were catfish, a chicken dish, and this steak. I wanted to try it but not gonna lie… I was SO SKEPTICAL! Turns out it was the best steak i had EVER had and knew I had to recreate it. Honestly, I forgot about it until tonight maybe because it was a year ago next month?! But it popped not my head and we HAD TO HAVE IT! Brian has never tried it, and love it… SO if it’s boyfriend approved it gets added to our favorite recipe list. Next time I make this, I would totally change up the sides and do a sesame kale salad, with quinoa or mashed potatoes!
Now let’s get to business… HERE is the recipe!
Coffee Rubbed Filet
In a small mixing bowl, combine the spices (himalayan salt, paprika, black pepper, garlic powder) and mix thoroughly. Next, add in the brown sugar and ground coffee, mix well and set aside. On a plate, rub the steak with olive oil, and rub the coffee spice mixture onto the steak; and coat evenly!
Sear the steak on a hot grill, or on a hot pan, flipping once cooked half way; cook to medium rare (or to your preference). Remove from heat once fully cooked, and allow to rest for 5 minutes before cutting to lock all of the juices in. From there, cut the sirloin at an angle, and ENJOY! We served ours with, gluten free pasta and cucumber salad for an easy meal!
