Okay we are now officially back from vacation from our trip to Punta Cana (thanks Beachbody!!!) We were looking through the fridge and freezer, to be sure we are going to use things that we already have… thus this creation was BORN! Now let’s get to the recipe, time to make it! I promise it’s ETRA delicious!
Egg Roll in a Bowl
(Gluten Free, Dairy Free, Tree Nut/Nut Free, Soy Free & Low Carb!)
- Extra Virgin Olive Oil Spray
- 4 cups Broccoli Slaw
- 1 Chicken Breast (Grilled & Cubed)
- 4 Eggs
- 1 teaspoon Sesame Oil
- 1 teaspoon Garlic Sauce Coconut Aminos
- Dash of himalayan pink salt, black pepper & minced garlic
In a large fry pan, spray with EVOO, and scramble the eggs (until finished). Then, add the grilled chicken breast, sesame oil, coconut aminos, and then lastly, add the broccoli slaw. Stir periodically for 5 minutes on medium heat, add in the spices and continue cooking until tender. Be sure not to overcook!
