Okay let’s be real; HOW EASY is it to brush things off when they don’t happen to you right?! I’ll be the first one to admit it! I never knew what “tree nuts” were until… BOOM I was diagnosed with a TREE NUT ALLERGY! Much like I never took the time to know what “gluten” was until… I got a call from my doctor saying “YOU HAVE CELIAC DISEASE!” Like I can’t even. Now, I feel for those with a tree nut and gluten allergy because, most gluten free things are made on the same equipment as tree nuts, and most things tree nut free (contain gluten or made on the same equipment!) So… needless to say I took matters into my own hands! I was sick and tired, and probably my family was sick of hearing me complain that their were no “SAFE” granolas I could have! Like can’t a girl get some damn granola?!?!
So it began! I decided to get to concocting my own gluten free, tree nut free and everything else free (Basically right?!) GRANOLA! Let’s be real, its BOMB.com and boyfriend approved as well!
Maple Cinnamon Granola
Gluten & Tree Nut Free | (Recipe is estimated, since I was in a RUSH I just wanted some granola haha!)
2 cups Rolled Gluten Free Oats (I used Bob’s Red Mill)
1/4 cup Ground Flax Seed (I used Bob’s Red Mill)
1/4 – 1/2 cup Chia Seeds
1/2 cup Pumpkin Seeds
1/4 cup Coconut Oil
1/4 cup Maple Syrup
1 teaspoon Cinnamon
Dash of Sea Salt
1 teaspoon Vanilla Extract
This recipe is SUPER simple! First, preheat the oven to 350; and line a cookie sheet with parchment paper. Next, add the dry ingredients to the cookie sheet (oatmeal, pumpkin seeds, chia seeds and flax seeds) and mix well. Next, heat the coconut oil in a microwave safe bowl; until its liquified. Then, add the cinnamon, sea salt, vanilla extract and maple syrup to the bowl and mix well. Then drizzle the mixture over the cookie sheet and mix until (most) of the oat mixture is coated well. Lastly, flatten out the mixture and bake for 30-40 minutes at 350, until the oats are toasted. Then let cool about 1 hour before packaging to ensure all of the moisture is out! Enjoy!
