When it comes to HEALTHY protein desserts, I’m ALL IN! The other day, I was creating a healthier dessert guide for my challengers and I was SO EXCITED to find these, and try it out! I adapted a recipe from another site, and made it my own; making half of them peanut butter cups and the other half almond butter cups! This recipe is EVEN boyfriend approved, and will surely be on our “to make” list again… MOST LIKELY next week! They’re THAT good & easy to make!
PB Protein Cups
4 tbsp Coconut oil
2 packets Chocolate Shakeology
** (Can also use Protein Powder- If using this, I add in a tsp of Cocoa Powder)
4 tsp. All-natural Peanut butter. (or Almond Butter)
Pinch of Stevia
In order to prepare this yummy dessert indulgence, you’ll need to put two tablespoons of the oil into a microwave- safe dish. Nuke it for thirty seconds until it’s in liquid form. Next, add four tablespoons of the shake powder and combine with the oil until properly mixed. Then, divvy up the batter between eight mini-muffin tray spaces.
Next, freeze your dessert for just five minutes. At this stage, you’ll need to take the muffin tray out of your freezer. After you do this, put 1⁄2 a teaspoon on every chocolate disk. Then, spread the all-natural peanut butter over the solid chocolate, using a bread knife. Lastly, repeat the first step, and pour this over the first layers of the dessert. Then, freeze for 10 minutes (or until frozen) & Enjoy. I store them in the fridge in an air tight container!
